I dream of opening a café in Ludlow – so it’ll be exciting to experience all the Ludlow food buzz once again, and it’ll be my first Ludlow festival since becoming a Ludlow resident!

What’s your top tip for seasonal produce in September?
September is a top month for ripe fruit and vegetables. If you’re lucky enough to benefit from someone’s glut of Gardeners Delight cherry tomatoes, cook them slowly in the oven or in a wide shallow pan with olive oil, salt and oregano for instant pasta sauce or the starting point for fabulous bruschetta.

What’s your best food hack/top shortcut?
Always boil more potatoes when you need to create ‘convenience potatoes’ for the next day. The options the next day are endless but here’s one:

Potatoes par-Bill

  1. chop them small,
  2. fry in olive oil with a bit of garlic, salt and pepper
  3. toss with some robust and peppery salad leaves for the beginning of a beautiful warm salad
  4. maybe add some local spicy sausage and finely sliced fennel and roast peppers.

What’s your store cupboard essential/the one ingredient you couldn’t live without?
Butter and salt both make life better in so many different ways

What’s your current favourite recipe?
I keep returning to a sourdough version of the Spianata in my recent ‘Bill’s Kitchen’ Cookbook – exciting to see those bubbles growing in the dough every time I make it.
